Fluffy, our scrumptious chicken liver pate with caramel pistachio and balsamic, is a great way to start a meal. Try our recommended entrées, such as Chicken, a three-day dry-aged chicken thigh stuffed with chicken liver pate, served with intense teriyaki sauce and sautéed confit vegetables, or the Smoke, a dish that combines Japanese and European smoke techniques—smoked halibut in Nordic style mixed with homemade pickles, topped with grilled fresh unagi and served with smoked genmaicha sauce.
Other signature dishes include Kamameshi, clay pot-baked rice with tender brisket and tongue, smoked daikon and gobo, cheese espuma, and egg yolk. This rich and flavorful dish is a fusion of Japanese and Western cuisine, guaranteed to leave you wanting more.
If you’re craving the juiciness of meat, go for a Tenderloin or Ribeye, Thai Wagyu beef, dry-aged for seven days and cooked in traditional Japanese style. It’s served with sautéed confit vegetables and 6-hour simmered beef jus.
